
Di from Di’s Kitchen Loaf is having an Autumn Event, collecting all kinds of loaf recipes. Carrot kugel is not usually made as a loaf but I thought it would be delicious in this form, which it was. Let me stress that this is not a bread so it looks wet, inside. Since a kugel is a pudding type food, this is what it should be.
Carrot Kugel Loaf – Source: The Kosher Palette - Serves: About 6
4 large carrots, mashed
1 cup flour
1/2 cup dark brown sugar, firmly packed
1/2 cup sugar
1-1/2 teaspoons baking powder
1/2 cup oil or applesauce
2 large eggs
1 tsp. vanilla extract
cinnamon is optional (1/2 teaspoon)
Procedure
Mash carrots. Preheat oven to 350°F. Coat a baking dish with non-stick cooking spray. Set aside.
To the carrots add flour, sugars, baking powder, oil, eggs, and vanilla. Beat at medium speed with an electric mixer until well blended. Do not over beat so batter will have small pieces of carrot for texture.
Pour mixture into prepared pan. Bake for 45 minutes or until a toothpick comes out clean.
