It was a moment of pure desire for a potato. I didn’t care if it was boiled, baked or fried. I wanted potato. I followed my inner guide, cooked this up and had my potato.
Potatoes and Onions
3 medium potatoes, sliced thin (almost as thin as for potato chips)
1 large onion, sliced thin
spray olive oil
chopped parsley
salt and pepper to taste
Preheat oven to 400 degrees F.
Spray a baking pan with olive oil.
Layer potatoes and onions in baking pan.
Spray the top later with additional oil.
Bake at 400 degrees fro 20-30 minutes, until it is golden brown.
Sprinkle with salt and pepper to taste and chopped parsley.

Yummmmmm!
And no milk added, so it’s better for me! Even taking a form of Lac-taid, dairy still bothers me.
Hi Casey!
Oh how I enjoyed this post. When we were kids, we often had this for dinner on Fridays because we didn’t eat meat on Fridays at our house. Potatoes and Onions and a loaf of Italian bread, oh yum!
Thank you so much for sharing and thank you for “playing” the Picnic Game. It really is funt to see the tasty morsels that will be “filling” our baskets:) You’re Invited and you’re bringing the letter C “See” ya there!!!
We had potatoes with dinner on Saturday night due to a similar craving.
Potatoes–YUM! I could live on them and only them. I would love for you to come and link up to the Creative Corner Hop. The linky will be open all week.
